Dr. Ítala Marx is a food scientist with 14 years of experience in food industry, acting as team leader, as well as in academia as researcher and professor. She is strongly committed to developing innovative solutions integrating cutting-edge science with technology, health and sustainability. Ítala’s objective is to bridge the gap between academic research and industrial applications, aiming to create positive environmental, social and economic impacts. Ítala is currently a Marie Skłodowska-Curie Actions (MSCA) Postdoctoral Fellow working on the Phenols4Health project at the University of Córdoba. This initiative focuses on the health benefits and applications of phenolic compounds from extra virgin olive oil. She received the EuChemS FCD Young Researcher Award in 2023, in recognition of her contributions in the field. She serves as a guest editor and reviewer for several prestigious journals published by Elsevier, Springer Nature, and Wiley, reflecting her expertise and standing in the scientific community. Ítala is also a guest lecturer and frequently speaks at scientific and non-scientific events, sharing her knowledge and passion for food science. Ítala’s research interests are diverse and interdisciplinary, focusing on areas such as virgin olive oil, the Mediterranean diet, phenolic compounds, food chemistry, precision nutrition, epigenetics, metabolomics and sustainability. She is particularly interested in the valorisation of bio-waste and by-products from the agri-food industry, exploring ways to improve health and sustainability through innovative approaches. Ítala continues to contribute to the advancement of food science, with a particular emphasis on making sustainable practices and health-oriented innovations accessible and impactful. She desires to develop innovative solutions based on the most current science, combining technology, health, and sustainability.
